SHEEP CASING

Sheep casings have small diameter and are used for sausages such as Bockwurst, Nuremberg sausage, Port Sausage and sausages in general. This casing combine delicacy and strength to withstand filling, baking and curing process. The color varies according to the country of origin, from white to gray, but this variation doesn’t indicate quality, strength and smoke penetration capacity.
